This breakfast is probably one of my favorite healthy breakfasts.. Simple, yet delicious, banana pancakes! They take pnly a few ingredients but they are so good, really. I had them for brunch today along with bana, strawberries and salted caramel topping. However I also like to enjoy them topped with chocolate, almonds and jam – They go well with just about all sorts of topping (and children love them as well!).
– 1 banana/banan
– 2 eggs/æg
– 35g oats/havregryn
– 1 tsp baking powder/tsk bagepulver
– ½ tsp vanilla/tsk vanillesukker
1. Start off by seperating egg yolks and egg whites. Make sure egg whites are in their own bowl. Pour egg yolks and the rest of the ingredients into a blender and blend until a smooth mixture (If you want to, you can also put them in a bowl and then use a hand blender to blend). Then whisk the egg whites until completely fluffy and then add in the batter, slowly mixing it all with a spatula. This makes your batter nice and fluffy!
2. Heat up a pan to medium-low heat with a little bit of grease or oil on it. Bake the pancakes on the pan and flip them when they start to bubble a bit.
3. When done, serve with whatever you’d like! I topped mine with banana, strawberry, chocolate mint leaves and Bodylab Salted Caramel Zero Topping!
